After viewing a dozen vids where you had to brine for 6 weeks, stuff with herbs from Mozambique and arrange the chicken in the downward dog position your video was refreshingly simple and turned out great. Thank you.😀

Why the variance in temperatures? Is the 450 to crisp the skin and the 350 to cook the bird through?

Of course as a kid my mom taught me to take handfuls of bacon grease and slather a chicken but especially a turkey and cover with salt and pepper. Now at 51 I still do that and the bacon grease just leaves a smoky flavor to the meat and skin. Love the look of your bird and want this for dinner one night. Blessings.
