Classic Italian bruschetta is the perfect appetizer for the summer. It’s simple and quick, but never fails to impress with its rustic charm and celebration of ingredients. Beloved TV chef Lidia Bastianich shows us how she makes bruschetta the traditional way from her home kitchen (scroll for her recipe). She creates the perfect bite by layering textures and ingredients, letting the tomato, garlic, basil and aged cheese flavors shine and sing in perfect harmony.
Recipe:
Ingredients:
Country bread, ciabatta cut in slices
Peeled and smashed garlic clove
Ripe tomato sliced in half
Olive oil
Fresh basil leaves
Grana Padano cheese (or parmigiano-reggiano)
Directions:
Grill or brown bread slices on both sides (on the grill, cast iron skillet, etc.)
Rub the garlic clove on one side of the bread slices
Rub open side of tomato on one side of the bread slices letting any juice and parts of the tomato stick to the bread
Drizzle bread slices with olive oil
Top each bread slice with a couple of basil leaves (break them with your hands if necessary)
With a vegetable peeler shave large pieces of cheese to finish each bruschetta
Serve and enjoy!
