I think people who are not Muslims do not know how Allah's mercy and forgiveness in Islam work....
If you sin against God, like you had a drink or you ate pork etc., all you need to do is repent and ask God for forgiveness, he will forgive you; but, if you wronged someone else, here you sinned against God and against someone else; and in this case, you will need to repent and ask God for forgiveness AND ALSO ask the one whom you have wronged for forgiveness as well.
In Islam, we don't say you can do whatever you want to others then just ask God for forgiveness and that's it, you will be forgiven! You will also need to seek the forgiveness from the one whom you have wronged.

Example, if someone killed a person, the killer can, and should, still ask God for forgiveness and God will forgive him if that killer is actually sorry for what he's done and sincere about his repentance, BUT the people of the victim, the family of the victim, can, and have all right to, still ask the judge for the capital punishment and not forgiving the killer. If they chose not to forgive the killer and they ask to have the capital punishment upon the killer, the judge has no other way other than applying the death penalty upon him! And this is because the killer has committed a sin against God and against someone else by killing in this example. Same goes for stealing and so on.
Therefore, the mercy of Allah in Islam does not mean he is not just.
