Here is my recipe:
1) 2 liters of water
2) 250 g of meat with a bone (30-40 min light fire)
3) Half a beet, half a carrot (increase the heat for 5 minutes, when it boils, reduce it to low)
4) Half an onion, 3-4 potatoes (increase the heat for 20-30 minutes, when it boils, reduce it to a small one) + half a tablespoon of salt.
5) Two good handfuls of cabbage (300g) (3-5 minutes after boiling), fried together with the cabbage:
Oil (3 tablespoons), a small onion, a spoonful of pasta ("with a hill") (3-4 minutes)
6) Parsley, greens, maybe a piece of bell pepper.
Follow this and you will get nice borsch)

Dude really fried meat for his borscht :-)
It's usually a bit simpler, eastern european soups almost never start with a sofrito like you did.
Just make a good beef stock, beef ribs are perfect for this. Ideally you should also have onions, carrots and celery roots in the stock. Then fry lotsa beets in lard (could just plain veg oil) until they change colour and loose volume, add a good heaping tbsp of tomato paste in the last 2 minutes of frying. Then dump it all into the stock + shredded cabbage + potatoes. Boil until cabbage and potatoes are soft.
Garnish each plate with a good tbsp of sour cream, fresh dill and a little bit of fresh crushed garlic.
It should look real red and taste a bit sour. If it's not sour enough, sometimes people add a tad of lemon or vinegar.

As a Pole i prefer Polish Barszcz but as one Ukrainian once said to me. "Polish version is just flawored water" wich is kinda true as we serve it without anything inside. Well maybe with Uszka (Small dumplings). Still Polish or Ukrainian they are amaizing. Also if You wanna try amaizing soup i recomend Żurek almost not known outside central Europe. But let me tell You one of the best soups in the world

When if you reheat it the next day to eat reheat the whole pot bring it to a boil then cool off and back in the fridge so day 3 its going to be🔥🔥🔥🔥

Next time add more beetroots inside borsch in slavic countries such as mine Poland we add more beetroots to borsch in order to get more color and flavour into that gorgeous soup 😋😋

Sauté the beets first and set aside. Once you got your soup ready then add it in and watch the beautiful transformation. Doing it this way you will get better color and I believe better flavor from the beets.

As a Ukrainian I personally kind of don’t like the fact that it’s not made as traditional as it should be. I personally believe that borscht should be beet based and have corn meal on the side and the borscht should have some sour cream on top. 😢☝️
