This (science) is what Krish tried to detail so eloquently: Mangoes, like other fruits, undergo various metabolic changes during ripening.

a) Maturity: The mango on the tree matures first. The mango grows, changes colour, and tastes and smells throughout this period.

b) After maturity, the mango produces ethylene, a plant hormone that ripens fruit. Ethylene converts complex carbs into simple sugars, sweetening fruit.

c) The fruit's respiration rate increases during the commencement of ripening. This metabolic activity boosts energy use to mature the fruit's interior components.

d)Conversion of Starches to Sugars: Mango ripening converts starches into sugars. Enzymes like amylases break down starch in mangoes into sugar molecules, making them delicious.

e) Colour Change: Ripening mangoes turn from green to yellow/orange. Chlorophyll breakdown and carotenoids production cause this change.

f) Texture Changes: As mangoes ripen, their tough texture softens. Pectinases and cellulases tear down cell wall structures, softening the texture.

The mango's unique aroma develops when its acidity decrease and aromatic components increase. Depending on when the mango is picked, this can happen on the tree or afterward. Mangoes plucked too early may remain hard and tasteless. Mangoes left on the tree may become excessively soft and difficult to carry. Thus, mangoes are harvested when mature but not yet ripe and left to ripen off the tree under regulated settings.
