By far my favourite addition to Minecraft recently is being able to decide what you take damage from. I know it might be cheating, but with there being SO much stuff to explore underwater, being able to stay under for long periods of time without drowning make the game so much more fun for me.

i love rewatching this and coming up with strategies. the best one so far is "mine the magma block and carry that with you, placing it near boats in order to be able to breathe whilst you steal their wood."

diamond ores have decreased chance of spawning if it is exposed to air, so its why underwater (and post 1.16 update, aquifers) have significantly more diamonds for cherry picking mining
