I recently learned something that blew my mind. When salt dissolves, the salt molecule a dually splits into sodium and chlorine ions. This seemed preposterous but I had chemists confirm it to me so what's the difference between that kind of dissolving and the dissolving that happens with, say, sugar? Are there other compounds that "dissolve" in this way too? Are there interesting demonstrations you could do to show this happening?

I wonder if it would work in place of mercury for a switch. Mercury switches are very useful, but not used much any more because of the toxicity of mercury.
