Definitely the iPhone 16 Pro, now that it has the same hardware then the iPhone 16 Pro Max.
It's just much more manageable and fits much better in the hand. Now at 6.3 inches, it's just perfect.

I have large hands so the Pro Max is working well for me (enjoy as big of a screen as possible lol) but for everyone else, the Pro makes way more sense.
