As far as Likert scale -- yes, you can use a parametric stat like Pearson r with it.  The numbers derived "on a scale from one to ten" (for example) are estimated and less precise -- and of course subjective -- but you can still do calculations with fully manipulable operations (multiply as well as add, etc.) and derive means.
