Ham and Egg 'Muffin' Breakfast Cups

I call them muffins because if you make them for a bunch of people, you can prepare them in a muffin or cupcake pan. Today, however, I prepare them in ramekins because iI just made two.

Preheat oven to 400 degrees.

Spray your muffin tine or ramekin with Pam.

Lay your ham out to cover the bottom of the tin/ramekin. Add your egg in (I have even lightly scrambled it prior to putting it in the cup), and whatever additions you want to add (onion, green pepper, mushrooms, cheese). Add salt and pepper if you choose.

Bake for 12-15 minutes. 12 minutes will give you a yolk that is still a little 'wet' and 15 minutes will cook it through to a hard boiled stage.

This is really nice when you do have a household full of people. You can prepare them and put them into the oven while you get hash browns prepared on the stove. I've made these for years now. Enjoy!

I made these one Easter morning with real thick deli ham loved it, it wet over really well! nummy you added onion Ill try that too!

I think I remember these but we did a biscuit in the muffin tin and pressed it down like a pie shell then filled it.

love this recipe and have the perfect ramekins! will grab some deli ham from where i work and try it out! not allergic to onions [smart ass] but i only like them cooked well/caramelized/fried. so could brown some up and throw them in...

My mama use to make these when we were kids. But she would use bologna most of the time. They would form a cup shape in the tins and had enough fat to be nonstick. I think yours sound a lot better to me these days. Not much of a bologna eater anymore :) But ham is nom nom
