You need to try a combination of series and parallel hook up on the power banks. You have them all in parallel so that basically makes it one giant power bank with all those in tandem. No voltage increase just ampere hours or current. But with a parallel and series hookup you can increase the current and voltage. You need to hook up like 2 bunches of 5 power banks in parallel like you did there. Then between the 2 sets hook up the positive lead to the other cluster's negative lead. Then hook up the 2 unconnected positive and negative leads to your charger plug.

There's probably some sort of safety limiter on the iPhone that prevents it from being able to charge it more than it's designed to. I imagine if it goes beyond that, it could be a fire hazard or maybe a detriment to the battery's life span.

I get the average person has no comprehension of how this works, and I suppose that makes this entertaining. However, the thing people call a 'charger' is NOT a charger. Those batteries are simply providing power, typically 5.0VDC. The phone has the charging circuit in it, and it regulates the charge power. As long as the one battery can supply as much power as the phone is designed to take, it will never charge faster no matter how many you add. iPhone 12 will only charge at around 15W max, and most midrange or better battery banks will do that with just one.
