They have pectin in them even if you don't cook them. Cooking simply releases it in a more concentrated form, that you can use separately to thicken things (jams and jellies)... you still gain benefits from it by just eating the apple.

Soak apple cores in water for a few hours. The resultant water will be loaded with pectin - you can use it to make jams

Ingredients
2 cups apples cored and diced
¼ cup apple cider vinegar
2 tsp vanilla extract
2 tbsp maple syrup
1 tbsp coconut sugar or brown sugar
1 tsp cinnamon
½ tbsp cornstarch
Instructions
Add all ingredients to a saucepan over medium heat. Cook covered. Stir occasionally, until the apples are tender, approximately 15 minutes.
Serve warm with oatmeal, yogurt and flax as desired, or as the base for a delicious apple pie.
