Breakfast Potatoes With Onions And Peppers are crispy, with lots of flavor from the onions and peppers and if you’re looking for a delicious potato dish for breakfast or brunch, you can make these crispy breakfast potatoes in less than 30 minutes without heating up the oven! And I'll show you my secrets for getting these on the table fast and how to get the crusty edges everyone loves!

Breakfast Potatoes With Onions And Peppers Ingredients
1/2 sweet onion, diced
1 lb potatoes (we're using yukon gold)
3 bell peppers, chopped (I'm using fire roasted, you can also use fresh)
2 tablespoons avocado oil
1 tsp salt
½ tsp ground pepper
Breakfast Potatoes With Onions And Peppers Directions
We’re going to use about ½ of a large onion, diced. You’ll want to have about ½ cup of onions… and one of the ways we get these breakfast potatoes done so quickly is by starting we’re going to get these cooking before starting the potatoes.
Heat a large skillet over medium high heat. Add about a tablespoon of avocado or olive oil. Once the oil is hot, add the onions, and cook them until they are softened.
How to make pan fried potatoes
Okay, while the onions are cooking, dice the potatoes into pieces that are about ½ an inch, which will help the potatoes cook faster but they’re still big enough to easily pick up with a fork. I’m using yukon gold potatoes, you can use what you have… and don’t worry about peeling these. When you’ve cut about ½ of them, place the cut potatoes in a single layer on a microwave safe plate, and microwave on high heat until they’re tender… this is about 2 ½ minutes for me. This is one of the keys to getting potatoes that are crispy in less than 30 minutes.
While the first bunch is in the microwave, continue dicing the rest of the potatoes. The onions should be about finished, when they’re tender remove the onions from the skillet. The first set of potatoes are done in the microwave, they’ve just about cooked thru, losing their crunch. Keep the skillet on low heat so the skillet stays hot while the second batch of potatoes finishes in the microwave.
Next, I’m using some extra bell peppers that I fire roasted the other day for some salsa, they’re super sweet, and the skins just slip off. They also take up a lot less space in the fridge. I’m give these a rough chop… if you’re using fresh peppers, you’ll want to cook them along with the onions in the first step.
Once the second patch of potatoes are done, add another tablespoon of oil to the pan and heat over medium high heat. Once the oil is sizzling hot again, add the potatoes, tossing to coat all of the surfaces with a bit of oil. I’m making these potatoes vegetarian today… you could use bacon fat here for even more flavor.
Cook the potatoes over medium high heat, until the edges are golden brown and crispy, it should only take 5 - 7 minutes…. Add the onions and peppers to the skillet, give it a stir and heat for about a minute or two for them to warm through. Season with salt and pepper and serve!
