The 3-2-1 technique for smoking ribs is pretty well known in the barbeque community. It produces the most tender, succulent baby back ribs you can imagine. In this video, I utilize this smoking method along with my keto BBQ rub and sauce to create some crowd pleasing ribs.

Technique:
1) Preheat smoker to 225F (110C)
2) Check underside of baby back ribs for a membrane and if present, remove it.
3) Coat ribs with yellow mustard and apply BBQ rub (approximately 2TB / 30g to the top and 1TB / 15g to the underside of each rack)
4) Smoke ribs for 3 hours
5) Place ribs in aluminum foil with the steaming liquid of your choice (diet soda works well) and wrap tightly
6) Return ribs to smoker for 2 hours
7) Remove ribs from foil and brush with BBQ sauce
8) Return ribs to smoker for 1 more hour
9) Serve with additional BBQ sauce, if desired

I took the Aaron Franklin BBQ Master Class, and he teaches the same technique. The only difference is during the 3 hour phase he sprites the ribs periodically with a 50/50 apple cider vinegar and water mix. He also uses that in the steaming phase. I use this method and love it! The ribs get so tender the bone pulls right out.

I made beef ribs in an Instant Pot yesterday and they were so good. I rubbed them with a rub I bought at Aldi (I read the ingredients and it was clean)) and a sugar-free sauce. OMG even my picky son loved them. I wish I had a smoker!

I finally made these yesterday. My husband clocked the sugar substitute right away so he didn’t like that but he did like the cook and was ok with the rub kind of lol. I’m going to share with my mom and brother since they are doing Keto. I loved bring able to have BBQ!

I like that membrane that most people remove. Depending on how you cook the ribs, the membrane has a bit of crunch or chew. 😊
