Quick tip, if you use your hands it will make the inside all gooey and make it harder to pull everything out, use a thick metal spoon and scrape the skin

I was told to leave them on a baking sheet by the window for them to dry out 1st. The bake them after they dried. But they always come out bad because takes to long to dry. I would have them sitting out for a week.

I used to love these but I just don’t eat them anymore because I, like you Kev, have a history of diverticulitis and diverticulosis. High debris foods like pumpkin seeds cause nasty flare ups. I’ve not had any problems in about 20 years now largely because I’ve disciplined myself to avoid consuming these kinds of items.
