INGREDIENTS
FOR THE SOUP
2 tablespoons (30g) olive oil
2 pounds (908g) boneless skinless chicken thighs
5 tablespoons (70g) butter
1 medium onion - diced
2 large carrots - diced
2 ribs celery - diced
5 cloves garlic - minced
7 tablespoons (56g) all-purpose flour
1/2 cup (120g) dry white wine optional
5 cups (1.2kg) low-sodium chicken broth or stock
1 tablespoon Better than Bouillon reduced-sodium chicken base
1 cup (170g) thawed frozen peas
2 teaspoons Worcestershire sauce
1/2 teaspoon ground dried sage
1 teaspoon dried thyme
1 cup (240g) heavy cream
3 tablespoons flat-leaf Italian parsley - minced
3 green onions - minced
salt and pepper - to taste
FOR THE DUMPLINGS
2 cups (260g) cake flour can sub all-purpose flour
2 teaspoons baking powder
1/2 teaspoon fine sea salt
1 teaspoon onion powder
1/2 teaspoon granulated garlic
1/2 teaspoon dried thyme
1/2 teaspoon ground dried sage
3/4 cup (180g) whole milk
3 tablespoons (42g) butter melted
1/4 cup (60g) sour cream

I am a Texan and my mom taught me how to make Chicken & Dumplings as a little girl. Her recipe was very close to this one, except she didn’t use wine in hers. I am going to try it with the wine, though. We use buttermilk instead of whole mile and parsley in the dumplings mix, But I am fairly sure she used parsley more for the color than for the actual flavor bust.

Preface: I am a full blooded southerner. Now you know.

My husband loves to watch sip and feast and when he saw this recipe, begged me to make it. I was dubious to say the least.

I made it tonight and I must say, this was damn good. The dumplings were the perfect texture and the sour cream really gave them an excellent flavor. The soup was delish. I did add extra onion but were an onion loving family. Honestly 9.5/10.

My mom always used a pair of tablespoons to portion her dumplings into the chicken soup. Scoop with one, push with the other.

As a southerner from eastern Kentucky, I was a bit hesitant when I started this video. This isn’t really how we make them, but that doesn’t mean it’s bad! I think this looks delicious! And tbf, you never claim that this is the definitive southern way. It’s just your way, and I respect that. 🔥

I'm from N.C. and grew up eating chicken & dumplings. They used to serve it those cafeteria restaurants that are now a distant memory. It was usually the thick rolled pasta style dumplings, rather than the floating clouds, which are superior. Anyway, it's sweet, sweet comfort food. I like to make it this time of year. Your recipe for the seasonings in the dumplings is something I will adopt right away.

Thank you Sir for giving me the tools needed to recreate my mothers chicken & dumplings.
I suspect this is something that came from her father or grandmother. Irish and Lithuanian decent. Very much Yankee’s and not southerners for sure.
I’ve never been able to recreate her dumplings. Your recipe is as close as I’ve ever gotten and is better in my opinion.

My grandmother made Chicken and Dumplings using Bisquick mix, so that's what I used for years. One day, I found I was out of Bisquick so l made my own. My homemade dumplings were even better than ever. I mix flour, baking soda, salt white pepper and sage, cut in a few tablespoons of cold butter, then some buttermilk. It's biscuit batter, really. 😋
