Can I use small scoby but let it fermented in longer time in order get the same results or it must be the larger batch I make, the greater scoby amount needed?

Where can I buy a unit like that and how much??

One isn't going to have as much success on the lower end of the temperature scale (68'F). Low temps also increase your chance for mold on your scobys. Mid to high 70's is way better.

This video does not contain very much useful information. I will see if I can make a better guide since I brew 10 gallon batches myself.
