Great recipe just tried it! I was missing the coconut milk unfortunately I did not have it in the fridge so I can scoop solid cream, also I used powdered erythritol as a sweetener since I am keto!

Great recipe, got addicted to it. 
I add 1 teaspoon instant espresso powder and 10-12 coffee beans to make it stronger. Delicious. Thanks for sharing this recipe :)

Could I omit the coconut milk and just use whole or 2%? If so, would I do half a cup, plus a tablespoon to get the same consistency?

You don't NEED a Vitamix -- You just need a high power comparable blender. There aren't that many comparable on the market, but the Cleanblend does work with it's 3HP of goodness.
