Ingredients:
2 tablespoons of oil or butter
2 29oz canned corn
1 cup of diced red onion
1 diced jalapeño
1/2 cup sour cream (I used Mexican crema)
1/2 cup cream cheese (I used onion & chive because that’s all I had)
1 tablespoon paprika
1 tablespoon Tajin
1/2 cup of cojita (use 1/4 cup to mix in and 1/4 cup for garnish)
1/2 cup mexican shredded cheese
1/2 cup cilantro
salt & pepper to taste
