So, the Trandoshans are pretty much the predators of the Star Wars universe

There are some details I recall of this fued, at least in legends, that were left out.

The Trandoshans didn’t know about the wookies when they originally set down on Kashyyk, they were setting up their first colonies. The Wookies came out of the jungle and slaughtered the colonists.

The Trandoshans considered this an act of war, and began to hunt and kill the wookies. Honoring the Scorekeeper and avenging their fallen. When the Republic found the system, the Wookies played the victim, since they were being hunted down by a technologically superior foe, and the republic took their side, imposing harsh sanctions against the Trandoshans and making the Wookies the system’s representatives in the senate.

So really, the grudge is pretty well founded, since the wookies started the fight without warning, and then played the victim when they realized they had just sucker punched a much more powerful entity.

When it comes to the representation issue, it's possible to have an Ambassador as a sort of assistant/advisor to the Senator. A lot of these represented a specific demographic on their homeworld, such as Jar Jar Binks and the Gungans. We don't even see one of these for Trandoshans, indicating that their ostracism from galactic politics was pretty intentional.

So the answer is because Wookies are seen as honorable foes worth many Jagganath points to their god the Scorekeeper.
The Old Republic MMO has a lot more information on Trandoshans and the Scorekeeper and how hunters could lose their points if captured alive, etc.
