Next time you are cooking eggs for someone, surprise them - cook the eggs this "Italian" way. They are going to love it!

Eggs – Italian Style
Ingredients
• 2 TBSP Extra Virgin Olive Oil (EVOO)
• 1 large or extra-large egg
• Chili flakes to taste
• Salt to taste
• Mozzarella cheese to taste
• 2 TBSP red wine vinegar
• Optional: Black Pepper
• Optional: serve with toasted English Muffin, bagel or toasted bread

Process
• In a small frying pan, add the EVOO and chili pepper, turn stove to medium heat.
• Then add your egg and if making scrambled, use a spatula and mix the egg white with the yellow egg yellow
• Add salt to taste and optional black pepper
• Add mozzarella cheese and mix into your eggs
• Cook for about a minute or 2 till egg is about half way cooked, then add the red wine vinegar
• Continue cooking for another minute or 2, then flip the egg over and cook for another minute or 2 – your wine vinegar will be all absorbed by this time
• Remove the egg and eat as is or serve with your favorite toast, toasted English muffin, toasted bagel etc..
• Enjoy

I am gonna try this! I love poached eggs with apple cider vinegar, so why not wine vinegar and top notch EVOO.

Looks great. I’m going to go try it now. I think Italian eggs with an English muffin and maybe a bit of Mexican salsa to make it a true multicultural meal.
