Super Soft and Easy Burger Buns with Yudane Method

Ingredients:
- For the yudane
• Flour: 50g (1.75oz)
• boiling water: 50g (1.75oz)
- For the main dough
• Flour: 250g (8.8oz)
• Milk: 150g (5.3oz)
• instant dry yeast: 4g (0.14oz) or fresh yeast:12g (0.42oz)
• sugar: 20g (0.7oz)
• soft butter: 20g (0.7oz)
• 1 egg yolk, around 20g (0.7oz)
• 1 egg white for glazing
• Salt: 6g (0.21oz)
Instructions:
- To prepare the yudane
• Mix the flour and boiling water until all the dry flour is gone.
• Cover the mixture. Refrigerate it until it becomes completely cold.
- For making the dough
• In a bowl combine milk, yeast, salt, sugar and egg yolk. Mix until the salt, sugar and yeast are well dissolved.
• Add the yudane and flour to this mixture. Continue mixing until a dough is formed.
• Transfer the dough onto a floured surface. Let it rest for 15 minutes. This resting period will help hydrate the dough and make kneading easier.
• Knead the dough for 5 minutes using a stretch and fold method. Then tear in the butter. Knead, for a 2 minutes.
• The dough should feel smooth and elastic to touch.
• Cover the dough with a cloth or plastic wrap. Let it ferment in a place for about an hour or until it has doubled in size.
• For dividing and shaping buns;
• Preheat your oven to 325 degrees F (160 degrees C).
• Grease a baking sheet to prevent sticking.
• Sprinkle some flour on your working surface.
• Divide the dough in 2 equal pieces or big one piece and small (like that shown) give them a light pre-shape.
• Place these wedges, onto your baking sheet.
• After covering the buns allow them to rise in a spot, for 30 minutes or until they have doubled in size.
• Next Use the egg white to brush the buns.
• Sprinkle seeds on top of the buns, before placing them in the oven.
• Bake them for around 25-30 minutes until they turn a brown color.
• Finally let them cool down and savor their deliciousness!
Tips:
🔹️This is optional, but you can do better for fermentation During the final fermentation preheat your oven to 160C (320F) fan on.
