I looked at one of these years ago, and came to the same conclusion as you: the capacity is way too small for large batches of meat! I ended up going with a regular 25# vertical stuffer with a patty maker attachment that attaches to it instead. There are times I even wish it had even more capacity; as we do whole beefs at times, and that a lot burger to process! LOL!
