Can you please provide more clarity when you say ‘Define the product’? That can be misconstrued by some PMs as their responsibility to explain what features should be built and how they should be designed. How do we avoid this confusion?

What if it's a data product and your data visualisations are the product, then aren't you defining the product with design? In my case, I as the PM decide and determine the data visualisations but if the designer were to select the data visualisations for the data product then they are doing the product manager's job too?
Since the design of the product is essentially the product, I end up doing the designer's work too as I feel that I need to ensure that the right visualisations are being used and thereby the right product is being built.

im run the ux team but i define the product. product does orchestration. is that wrong? i am more stretegic than the product folks so it just kind of happened.

Very dangerous definition. If other roles are not doing their job, orchestration will eat you alive. You will find yourselves doing the job of Engineering and Ops.
