BALSAMIC ROASTED BEET SALAD! I used to hate beets, but roasting them completely changed my mind!

This salad features sweet, tender roasted beets paired with arugula, creamy goat cheese, crunchy pistachios, and a punchy balsamic dressing. TIP: If you use both red and yellow beets, roast them separately to keep the red beets from staining the yellow ones red too.
YOU’LL NEED
-2 lbs medium beets
-5 oz arugula
-½ c roasted, salted pistachios
-⅓ c dried cranberries
-4 oz goat cheese, feta, or gorgonzola
For the Dressing:
-¼ c balsamic vinegar
-3 T extra-virgin olive oil
-1 tsp Dijon mustard
-1 tsp honey
-1 clove garlic, minced
-¾ tsp kosher salt
-⅛ tsp ground black pepper
Roast the beets, peel, and dice them. Toss with arugula, pistachios, cranberries, and cheese. Drizzle with balsamic dressing and enjoy warm or chilled!
