INGREDIENTS
1lb Russet potatoes
1/2 tsp salt
1/4 smoked paprika
1/4 tsp granulated garlic powder
1/4 tsp granulated onion powder
1/4 black pepper
15 corn tortillas
cooking oil for frying
shredded lettuce
slices tomato
thinly sliced onion
crumbled queso fresco
Mexican sour cream
pickles carrots and jalapeños
salsa of your choice

YUM. I love these, too, with pico de gallo as my salsa. but really anything will work. so perfect, contrasting temperatures, textures and flavors.

We put queso fresco in the potato mixture before we put in corn tortillas, and used to use can tomatoe sauce to dress the tacos with shredded cabbage and more queso fresco, now we use homemade salsa

I'm from SATX and I get it!! Half the time when I order cheese enchiladas with lettuce some diced Tom's, questions fresco I ALWAYS mix the "salad" into the gravy/grease, so I am soooo down for this, especially since you used flour torts instead of doughy flour tacos!
