I love chicken soup! In Scotland we add pearl barley to it whilst it cooks, instead of rice or noodles later. It’s gluten free and adds a beautiful thickness to any soup or stew.

This video brings back good memories as my dad always made chicken soup when he spotted that one of us was getting the sniffles. He would serve it with either homemade pasta or rice, same as you do.
For a twist he would turn that chicken soup into a tomato soup and serve it the same way. Tomato soup with rice is delicious and it is still my go-to comfort food for when I'm not feeling all that great.
The only difference is that he would cook the rice in the soup so the starch acts as a thickener. I'm tucking into a bowl of it as I type this - made just the way he did it.

He was a single father of four, working full time and homesteading and I am sure he would have been a big fan of your channel, even though he didn't speak a word of English. He would appreciate how you do things and would definitely try a lot of your recipes. He was a great cook and a baker.

Btw, I can't believe Hannah is one year old already. How time flies.

Thank you for the gluten free recipes! As a celiac person, it is difficult to find recipes that are made with gluten free flour in mind. I can't wait to try these out!

Can’t believe little lady is 1, I started following you back at the beginning of 2023 for the pantry challenge as I watch Becky from acre homestead. I remember watching your birth story and thinking what an amazing woman you are to labour while Adam sleeps and you get on with chores! So much respect for you. I have 2 children and had to be induced with both, my eldest who is 20 this Valentine’s Day 😭 because he was 2 weeks over due and then my daughter who is now 14 because I had gestational diabetes and over here in the uk they don’t let you go passed your due date due to increased infant mortality. So I’ve never had a natural labour and I can honestly say just from my experience there’s no chance of chores getting done or my hubby sleeping, it was the most unbelievable pain but totally worth. Anyways a happy belated birthday to your beautiful girl this past year has flown by. I look forward to the coming year and seeing what joy it brings us xx

Thank you for sharing some gluten free recipes! I really like the idea of freezing waffles for later-- I have a waffle maker but have never tried to make a big batch to freeze. I mix my own GF flour with 6 cups brown rice flour, 2 cups Potato Starch and 1 cup tapioca starch. My favorite recipe is for GF pizza crust which I also use as a flat bread. In a mixer bowl, mix 1.5 cups GF flour, 1 teas baking power, 1 teas kosher salt, 1 teas xanthan gum (or 2 teaspoons gelatin if you don't use gums). In separate bowl mix 1.5 teaspoon yeast, 1 tablespoon sugar OR 1 tablespoon honey and 1 cup warm water. Let the yeast/sugar/warm water mixture proof for about 20 to 30 minutes until it's risen and bubbly. Then mix the wet with the dry ingredients and blend with a dough hook about 3 minutes, while mixing the dough, slowly add 4 Tablespoons Olive Oil (or light tasting oil of your choice). The dough should be a thick wet plaster-like batter (NOT DRY). Cover and let it rise in a warm spot for about 30 minutes. Pour the dough/batter onto a baking sheet or pizza pan covered with parchment paper. Dip your fingers in warm water or coat them with a bit of olive oil and gently pat the batter into the shape/size you want it. DO not expect to knead it-- it will be very wet and not anything like the texture of wheat based pizza dough. The less you press it down, the more airy the crust will be. Let the crust rise another 15-20 minutes after you press it out and preheat oven to 425 degrees. Bake 10-12 minutes.Then add toppings if using for pizza and bake another 10-12 minutes. I make pizza crusts in advance and freeze after the first baking, just like you do for waffles. It's so handy to have on hand when I want bread or pizza. 😊

Wonderful video!! I am trying to make gummies today. I heard that you could use a plastic ketchup bottle, with the narrow nozzle, instead of the little droppers to make the job easier.
