so i tried this and it was decent, but i thought i could improve on it so i tried again with a couple of changes: 1. it was way too sweet so i reduced the sugar to 1tsp and it was perfect. 2. i was bothered by the idea of using yeast and just cooking it immediately after mixing, with no knead or rise, so in place of kneading this very wet, pourable dough, i stirred it for about 8 minutes with my wooden spoon to mimic the action of kneading. it worked well, as the stirring created long gluten strings that got stronger as i stirred. then i let it sit for an hour at room temperature, just to see if it would rise, and it did. after that, it was still pourable and spreadable but it had lots of stringy gluten and air bubbles. the end result was much better than the original. it's still a soft bready dough but it rose a fair amount and had a nice yeasty flavor, and was more substantial than the version that was cooked without the stir-and-rise combo. this is a perfect weeknight pizza option and it will go into my regular rotation! oh also i used a different sauce that i know i like as the tomato paste sauce didn't sound too appetizing.

That looks great. I remember those pizzas. Our pizzas were always a little undercooked I think. They didn't have any real browning on them. Maybe it was the rush of feeding so many kids. :) Thanks for your videos. I sure do miss the school pizza from the '90s. First it was those rectangle slabs. Then sometimes we would have those squares that were a little smaller, but they were puffier and taller. Then sometimes we would have some weird round ones that look like a deep dish red baron.

The original rectangle will always be the best.

I'm 67 and my mom used to be a "cafeteria lady". That was in the REAL "old days" when everything was made from fresh ingredients. I don't remember if they made this because she never made it at home - but I worked as a teacher's aide and later secretary for the schools and remember having it when my kids were in elementary and I was working.
