1/2 cup butter melted (or bacon grease)
1 cup all-purpose flour
1 cup yellow cornmeal
1 tablespoon sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cup buttermilk
2 large eggs

honey butter

3/4 cup butter, room temperature
1/4 cup honey (or however much you like)

What size cast iron pan did you use for this?

That is close to what I was raised with and taught to cook. Family is from TN, so no sugar. We did not put butter on the top, I will have to try that next time I make cornbread.
One thing our family did was use all bacon grease in and around the cornbread. So Mom would put all the grease (oil) needed for cornbread in the case iron then heat in oven. Right before you were ready to add mix to pan, we poor the hot grease needed for the cornbread into the mixture. Stir, then immediately poor that into hot cast iron and put into oven. Oven was at 425. Lovely.
Anyway, I subscribed and will try the butter trick without the honey.
Be careful with poor grease from hot cast iron if you try that, just burnt my little finger last week making cornbread.
