Cast Iron Skillet Corn Bread

Ingredients

1 1/4 cups coarsely ground cornmeal
3/4 cup all-purpose flour
1/4 cup granulated sugar
1 teaspoon kosher salt
2 teaspoons baking powder
1/2 teaspoon baking soda
1/3 cup whole milk
1 cup buttermilk
2 eggs, lightly beaten
8 tablespoons unsalted butter, melted

Directions

Preheat the oven to 425 degrees F and place a 9-inch cast iron skillet inside to heat while you make the batter.

In a large bowl, whisk together the cornmeal, flour, sugar, salt, baking powder, and baking soda. Whisk in the milk, buttermilk, and eggs. Whisk in almost all of the melted butter, reserving about 1 tablespoon for the skillet later on.

Carefully remove the hot skillet from the oven. Reduce oven temperature to 375 degrees F. Coat the bottom and sides of the hot skillet with the remaining butter. Pour the batter into the skillet and place it in the center of the oven. Bake until the center is firm and a cake tester or toothpick inserted into the center comes out clean, 20 to 25 minutes. Allow to cool for 10 to 15 minutes and serve.

I love cornbread. Eat it with soups, stew, beans, chili. Love cornbread dressing too. I don’t put sugar in mine most of the time. I also use bacon grease to grease my iron skillet but do add melted butter to the cornbread as I’m making it.
If I’m making a tamale pie etc I’ll add sugar otherwise I don’t. I think it depends what I’m eating it with.

Cornbread is a staple food in rooted southern homes. This much butter would not make a good daily table dish, but I sure would enjoy it every once in awhile. For regular eating:
Heat your skillet with bacon fat. You want meaty smokey goodness, I should not have to convince you of this. Sprinkle the pan with cornmeal after heating the pan and before adding the batter. Make the batter however the hell you please, but maybe not a whole stick of butter. Add a touch of sugar if you want to though, if somebody has something to say about it hit 'em with your skillet and more for yourself. Serve bottoms up.

I have a yard sale rescue cast iron skillet that in the 25+ years that I have owned it as neve had anything but cornbread in it. Love Alex and watch her any chance I get.

I'm from the south...I have tried a of cornbread. Even went to festivals. Lol yes there are cornbread festivals. This is my favorite go to recipe. AMAZING

I put my buttered empty pan in the fully pre-heated oven for 3-4 mins, then add batter to a sizzling hot pan- forms a really great crust- but be careful-its hot!!

The printed recipe that is on Food Network.com says to reduce the oven temperature to 350 when you take the skillet out to add the butter and the batter and that is the way that I have always done it and it turns out perfectly. But Alex says here to bake it at 425 degrees for 20-25 minutes (same time as the printed recipe). Wonder why the difference?
I love watching Alex cook also, she doesn't showboat, act wild or rely on a catchphrase. It is just like hanging out in the kitchen with a good friend.
