Ingredients:
Cheesecake filling:
3 8oz packages go cream cheese (room temp)
1 1/3 cup of sugar
3 tablespoons of cornstarch
1 tablespoon of vanilla extract
2 eggs (room temp)
2/3 cup of heavy whipping cream (room temp)

2 sleeves of graham crackers crushed finely
1/2 cup of sugar
1 stick of melted butter

Sweet potato filling:
2 large sweet potatoes (baked and mashed)
1/2 cup of sugar
1/2 cup of light brown sugar
2 tablespoons of cinnamon
1/2 tablespoon of nutmeg
1 stick of melted butter
1/2 cup of heavy whipping cream or condensed milk (add a lil more if mix is too thick)
1 egg
1 tablespoon of vanilla extract

*9" spring form pan
*Bake at 325 degrees for 1 hour and 20 mins
*let cool completely before refrigerating

I've been making a mean pumpkin cheesecake for many years. Nothing to it but my kids and their companions seem to conveniently "lose" the recipe when the holidays come around. "Is there any way you could make a couple for us? Dad? You know we just LOVE you!"🙄😂❤ I'm anxious to make this one though! Look's great! Thanks again!🙏

Made this yesterday and chilled overnight. Not ashamed to say the first thing I did when I woke up this morning was go straight to the fridge and try a little piece. It is SO GOOD!!! It’s like every bite seems to have a little bit of a different taste. So smooth and creamy, the crust is buttery and crunchy… i haven’t even put the toppings on yet and it’s already a 100 for me! Thanks for helping making Christmas Eve dessert (ok and breakfast😂) so memorable!

I am making this tonight ! I am wondering how many cups of pureed sweet potatoes? I recently bought may pounds for smaller sweets for .29, I want to make a few smaller cheese cakes to share . I am going to try ginger cookie crumbs for only mine. Your cake was beautiful ane noted not a crack in the top. Beautiful job. Hugs from East Tennessee.
