What is a Lotus Root & How do You Eat It? #shorts

Growing up in the states, I have never heard of a lotus root until moving to Japan. It is commonly used in a lot of Japanese soups and side dishes, and both tastes and looks great. As a person who loves challenges, I attempted to make a type of miso udon using a lotus root. Of course, I had to give it a seasonal kick by adding some pumpkin. Let me know what you think!
