Try it in hotpots or soups or instant noodles. It's quite good when rehydrated. I had it in some instant noodle cups. I think the red shin ramen ones. Soaks the broth good.

In Pakistan it's called "bih" in Sindhi and it's a very popular dish among sindhis of Pakistan and India. It is pretty nice with rice and roti. Not gully eating it raw. 😂

Try making "bih ji bhaji" which literally translates to bih Ka salan. It will taste really good.

Lotus root is typically used in soup dishes. It's much softer and edible when rehydrated. It also has many nutritional benefits.

We sindhis make chicken curry and put these in it, its soo good specially when it absorbs that watery gravy ❤ soo soft and crunchy at the same time

My mother usually cooks these in hotpots or soups, which of course helps soften them up too and becomes more pleasant to eat.
