PUMPKIN CONGEE 🙌

450g pumpkin
1 carrot
170g vegan chicken pieces
2 spring onions
1 tbsp ginger
3 garlic cloves
1l water
150g rice
1 tsp ground coriander
1 tsp white pepper
1 tsp vegetable stock powder
1 tbsp rice vinegar

Garnish:
Chilli oil
Spring onion

1. Slice the pumpkin and carrot into small pieces so it cooks fast. Set aside for now.

2. On a medium to high heat fry the chicken pieces until golden and set aside.

3. Finely chop the garlic and grate the ginger. Chop the spring onion but leave the green parts for garnish. Fry for a few minutes until fragrant.

4. Add the pumpkin, carrot and 1l of water to the pot, cover and leave it until the pumpkin is soft (around 10 minutes).

5. Once the pumpkin and carrot has cooked through, roughly blend it with the immersion blender leaving a few small chunks.

6. Wash the rice and add it in together with the spices and the stock powder. Cover and boil for another 10 minutes. Mix the congee every few minutes to prevent rice from sticking to the bottom.

7. Once it's cooked, add the rice vinegar and serve with chilli oil and leftover spring onion greens.

I’m so happy I found your page. It’s kind of crazy, because I also moved to Germany thinking I might get a master’s degree. I’m working here right now on a scholarship but I’m just so overwhelmed thinking about what the future holds. I’m happy to hear I’m not alone and I’m sure your channel will grow because of these truly human feelings you express with great cooking footage!

I’m 30, traveled my entire life doing odd jobs..no career drive and coming to peace with that…just that no one around me ever understands my way of life, and I’m slowly accepting that fact too!

Woah you spoke my thoughts exactly. I didn’t do a masters but i was basically buying time while doing my bachelor’s and trying to buy more time by wanting to further my studies even more. Thankfully i didn’t (and avoided getting into more student debt). Now i’ve paid off my student loans and am doing something i really enjoy doing, even if it’s not the most high flying career out there.

My mother (also from eastern Europe), had to go to university even, even though she didn't want to. After coming to Germany, she decided to do what she always wanted and became a cook and she never regretted the decision.

Why didn’t you get into a masters program? Were you denied or you just decided to get a job? Also, what do you do for work? I’m from Arizona and likely moving to Cottbus or Berlin in the next year (just finished my masters degree).

Uni is not the best option for everyone.
Some jobs require it, like teacher, doctor and so on, but if you want a job that doesn't require it, it's just a waste of time to study then.

I was born and raised in Germany. I threw my abitur, I didn't wanna go to college and I was sick of studying.
Ended up in an apprenticeship in a 4 star hotel and am now working a cozy night shift job in said hotel where I'm paid for sitting on my butt playing video games for half my time.
