By reading comments on this video, I realised that people need to be reminded that resource packs are visual. Sword blocking that he showed here is probably made with a shield that has a different model because of the resource pack. I think it was possible even before the update, but only with Optifine features. Now it can be made in vanilla, and there are even some other features (for example, change of texture on Christmas, as stated in the video) that weren't possible until now.
