Lemony Shrimp Pasta

I love this pasta recipe because it's simple, it's delicious, and comes together in under 20 minutes! The flavours of the Shrimp, Tomatoes, and Lemon pair so well together :D

INGREDIENTS
1/2 pound, Linguini
1/2 pound, large Shrimp (peeled and deveined)
Zest and Juice of 1.5 Lemons
1/4 tsp, Red Chili Flakes
4 tbsp, Olive Oil
3 cloves Garlic, finely minced
Salt to taste
3 Plum Tomatoes, seeded and diced
2 tbsp, Butter
1/4 cup, finely chopped Parsley
METHOD
Bring a large pot of water to a boil and season with salt so that it taste like the sea. Add pasta and cook for 8-9 minutes or as instructed on the box to reach an al dente state. The pasta should be tender, but still have a little bit of bite. Reserve 1 cup of the starchy cooking water (which will be used later), and drain the pasta.
In a bowl, add Shrimp, Lemon Juice and Zest, Red Chilli Flakes, Olive Oil, and Salt to taste. Stir to combine.
Heat a large non-stick frying pan on medium-high heat, and add Shrimp in one even layer, reserving the marinade (which we will use later). Cook Shrimp for 30 seconds on each side or until just slightly opaque in the middle. Remove from pan and set aside.
Reduce heat, and add reserve marinade to the pan stirring consistently for 30 seconds. Then add Tomatoes and continue to quick until slightly tender.
Add hot pasta to pan along with 1/2 cup of the reserved starchy cooking water, Butter, and salt to taste. Toss to coat. Turn off the heat, and add cooked Shrimp and chopped Parsley. Toss to combine.
Serve immediately. Enjoy! :)
