We were kindly invited by Pasta Granny Teresa to her parish's annual 'Italian Evening', where she and other volunteers cook up a delicious feast to raise money for the church.
Here Teresa teaches Father Shaun how this traditional roasted pork dish comes together. It's a wonderful feast for keeping hungry crowds happy.

A boned pork leg is a good cheap route to go here as a whole pig is a bit spendy.
There's so many recipes for porchetta it would take a lifetime to try them all.

I’ve never seen porchetta like that. I always take a pork belly and stuff that with a boneless pork loin then roll/tie it.
