Skin has lots of collagen in it. I always eat the skin too.

The skin of the fish contains oils and flavors. When you remove it, you remove a part that makes the food delicious when it interacts with spices and oils, and it makes the piece cohesive.

I prefer to leave it on Salmon it's a heat barrier to help avoid over cooking and remove it after flipping face down when finishing / the top . Nice piece of fish there 👍

Most of the omega 3 in salmon is in the skin, I love it
