Good video. Sushi chef might argue the first cut in the video will leave a lot of meat on the bone due to the broad stroke nature. They tend to slice, an inch deep at a time, towards the length of the fish so they can re-angle the blade and extract as much meat as possible with the fillet. Nonetheless, this is a good video.

Removing bone after you cook it is easier and gets them all. But if you are eating it raw then....i guess you trust whoever fillets it.
