Nice to see some Texans in Washington that actually knows core Texas BBQ items. Seeing them adapting some newer BBQ techniques, while respecting the roots, brings some comfort to this Southern's heart ❤️

Not likely to find post oak or mesquite around here like in texas. I use big leaf maple and alder to cook my briskets and pork shoulders. Salt, pepper and apple cider vinegar as sous. 150 degrees internal and then wrap with pink butcher paper to shorten the 'stall' and save some wood. When it reaches 200 deg f put it in an insulated box or cooler for an hour. It should continue to cook and gradually cool and then firm up to slice or pull. Peco's BBQ has a few locations and also has a food truck with locations posted on their website. Pricy but athentic pit bbq if you're not enclined to dys.

I think someone needs to provide commuter bibs for these food truck visits. Then you can dig in without messing up your suits.

Well if they’re from Texas what they should do with the funding is donated and helped us families that just lost their children in Texas from that brutal shooting that’s what I would do if I had a business like that donate my money to those poor families that lost her young children to support them and what they’re going through because they just lost their children to a bloody shooting that’s where the funding should go to from these food trucks the people are from Texas and everybody should get together and help out we should all start a go fund me account for those families that lost our young children in Texas I don’t understand why they’re sitting here Not talking about those young children lives that got lost in Texas and they’re sitting here smiling and happy knowing that there’s families out there that just lost their little kids this is ridiculous
