➖ Recipe ➖
Mashed Potato -

1kg (2.2lbs) - Kestrel, Russet or Yukon Gold Potatoes, Peeled & Halved
100g - Unsalted Butter, Softened
150ml - Full Fat Milk, Warmed
2 - Free Range Egg Yolks
4 Tbsp (30g) - Parmigiana Cheese (Parmesan)

Cottage Pie -

2 Tbsp - Olive Oil
1kg (2.2lb) - Beef Mince
1 - Carrot, Peeled & Grated
1 - Brown Onion, Grated
1 - Large Celery Rib, Grated
3 - Cloves of Garlic, Grated
3g - Flat Leaf Parsley, Finely Chopped
3g - Rosemary Leaves, Finely Chopped (optional)
3 - Sprigs of Thyme, Leaves Only, Finely Chopped
2 Tbsp (50g) - Concentrated Tomato Paste
2 Tbsp (30ml) - Worcestershire Sauce
1 Cup (250ml) - Red Wine (Can be substituted for 1 Cup (250ml) Vegetable or Chicken Stock
1 Cup (250ml) - Vegetable or Chicken Stock
1 Cup - Frozen Peas
Seasoning to taste

Method -

1. Place the peeled whole potatoes into a large saucepan or pot and fill the pot with enough cold water to cover the potatoes by 1 inch. Place the saucepan or pot over high heat, boil, and cook for 22-24 minutes or until soft but not completely falling apart. Once cooked, pour the potatoes through a colander (sieve) and allow them to drain.

2. Place a small saucepan over low heat and add the milk. Allow the milk to heat slowly, but don't let it come to a simmer. Remove from heat.

3. Mix the potatoes using a potato ricer or masher until they're incredibly smooth. Pass the mash through a fine mesh sieve with a bowl underneath to get the smoothest mashed potato possible (optional). Check the salt and pepper and adjust if needed.

4. Preheat oven to 180.c - 350.f.

5. Heat a large, high-rimmed pan over medium-high heat. Add olive oil, beef mince, salt, and pepper and cook for 5 minutes or until the liquid evaporates. Add onions, carrots, celery, garlic, flat-leaf parsley, rosemary, thyme, concentrated tomato paste, and Worcestershire sauce. Mix well and cook for 5 minutes.

6. Add the red wine and reduce for 5 minutes or until reduced by half. Add in the chicken or vegetable stock and frozen peas and bring to a boil. Reduce heat to low and cook for 15 minutes. Check and adjust seasoning. Remove from heat.

7. Add the beef mix to a large roasting dish roughly 30cm long. Add the mashed potatoes over the top and gently spread them out, covering the surface with a spatula. Use a fork to rough the potato surface and grate over the parmesan cheese. Bake for 20-25 minutes or until the mashed potatoes are golden and crispy. Remove and rest for 10 minutes. Serve and dig in.

I seldom respond to YouTube videos but yours touched me Jack. I've been watching your videos for awhile never gave it a thought that you were going through some major stuff in your life. So watching the cottage pie video lead into what you had been going through stunned me. I am so sorry you had to go through what you did and see that you were able to come out the other side a stronger person says so much about who you are. I am so happy for you.

Dear Chef Jack, i very rarely comment on videos but this time i think it´s neccessary. I moved out of my parents house last year to go to med school after working in EMS for some time. I´ve never really learned to cook anything before so now that i´m on my own i looked for quick an easy to make recepies. That is when i found your channel, now over the time many of your recepies are my comfort food. Especially during times when i can´t handle the stress that univerity causes sometimes i pick out one your dishes to cook myself. It really works wonders to take my mind of all the tolls that university takes. So i sincerely thank you for not only teaching me how to cook but also for providing me with avery tasty form of therapy :)

❤ thank s for opening up. It makes you real and I can empathize with your struggle. I’m on antidepressants and talk therapy. Having a kind following and comfort food makes life better. Let’s show love to each other. Cheers to you for not acting like your life is perfect and being vulnerable. It’s refreshing.

Really glad you got through your depression! You have helped me go from hating to make food, to enjoying to make food (which I have always hoped to like). In turn it makes everyone happier as we enjoy great food together as a family. Win all around. If you ever come to Norway, please let me know. I'd love to buy you several rounds of beers!

Good on you for sharing your depression and anxiety. I have both of those so I know what it's like. Just know that you're bringing a lot of joy to a lot of people's lives by sharing your wisdom with us. You've helped me out a lot and several of your recipes are now staples.

Funnily enough I always loved it when my mum cooked cottage pie at home and would have more than a normal amount of servings, haha. I'm definitely going to make your version as I'm sure it's even better.

Lovely, in every sense of the word.

And the fact that you’re doing this in Australia is mind blowing to many of us, I’m sure.

Sharing is caring and sometimes one has to reach rock bottom to be able to realise you can't do it all alone and ask for help. Pick someone you feel you can trust to share with and act as a sponsor for you. Great going Jack and you're looking great now and hopefully you're feeling it too. I had to reach my own rock bottom before I got my help and knowing it is there helped me move forward

Glad you’re doing better buddy. If it helps, your recipes mean a lot to me. I love cooking but I just don’t have time to do it as a college student, so when I do cook you’re the quickest and easiest source to go to for meals. Plus in down time I’m always watching your videos. Really do appreciate your channel and again, I’m glad you’re doing better :)

You always make multi-step meals more approachable for me. My husband loves this dish so I will be making it this week. Thank you and kudos for taking those brave steps that have led you to a better, happier life. I know it's a difficult process but the rewards are obviously worth it.

Having made your "chicken stir fry I make all the time" literally every night for the past 3 weeks, I guess I could make this one for a change 🤣 That recipe's been life changing for me honestly. I feel great. And it tastes so delicious. Thanks for sharing, Jack. It's wonderful to hear you're keeping well.

I use parsnips and white cheddar added into my mashed potatoes to top the meat & veg part with. A wonderful British Lady at my church used to make Cottage Pie for out church luncheons. Happy you got help with your problems. Actually realizing you have one and then ACCEPTING help with it is probably the most difficult part of it. Bravo to you and your YouTube channel for bringing joy and happiness to millions of people!❤

Thanks Jack not just for another great dish (well explained and demonstrated as per) but also for being big enough to share some personal insights which will no doubt help others. I live mostly alone (working abroad) with my lovely family in Uk so, as I head to retirement, trying to cook using your videos is a important piece of my life. Thank you again...Keep it going mate you do a lot for other you don't even realise. Thanks Chef 👨‍🍳
