Meat Looks pretty good. Two tips. Put a damp paper towel under your cutting board so it won’t slide around and if your slicing left handed, turn your meat 180° so your no doing it cross handed. Did you dry rub the brisket before smoking ?

Cooking it sous vide at 155 but your mistake was you have to cool off in a ice bath before putting it in the oven You dry it out by putting it on the top rack if you want to use broil I suggest the lower rack leave it on high broil

i didn"t see you cool back ye meat and you did not pad it dry before you put it on te broiler. Could you tel me wy ?

Wow Im confused, I did he same thing even without the oven and my brisket came out tough like a puck. Mine was prime meat to boot.
