PRICKLY PEAR JELLY
Ingredients
• 27 prickly pears (cactus fruit)
• ¼ cup lemon juice
• 1 (1.75 ounce) package fruit pectin (such as Sure-Jell®)
• 4 ½ cups white sugar
Directions
1. Simmer 3 pint-size jars in a large pot of water until jelly is ready. Wash the lids and rings in warm, soapy water.
2. Slice ends off each prickly pear. Make 1 long vertical slit down each one. Use slit to hold skin and peel off. Discard peel.
3. Place peeled pears in a blender; purée in batches until liquefied. Press puréed mixture through a fine-mesh sieve set over a bowl. Discard pulp and seeds.
4. Measure out 3 cups prickly pear juice and pour into a large pot. Add lemon juice and pectin; bring to a boil, stirring constantly. Add sugar and return to a boil, stirring constantly. Let cook at a boil until thickened, about 3 minutes. Remove from heat.
5. Pour prickly pear jelly into the hot, sterilized jars, filling to within 1/4 inch of the top. Run a clean knife or thin spatula around the insides of the jars to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with the lids and screw on the rings.
6. Place a rack in the bottom of a stockpot and fill halfway with water; bring to a boil. Lower jars 2 inches apart into boiling water using a holder. Pour in more boiling water to cover jars by at least 1 inch. Bring to a rolling boil, cover the stockpot, and process for 15 minutes.
7. Remove the jars from the stockpot and place onto a cloth-covered or wood surface several inches apart. Let cool for at least 24 hours. Press the center of each lid with a finger to ensure the lid does not move up or down. Remove the rings for storage and store in a cool, dark area.

Nizhoni are the prickly pear fruit and so flavorful! 😋That species of cacti, the fruit seems to have a thinner skin, the ones over here in the Bajío(central Mexico) are thicker skinned, and one way to cut the peel away, cut off both ends, then cut through the middle from each edge and you grab one end and it will peel off fairly easily. Hello, Grandmother, I hope all is well with you and grandfather You have brought back memories of my youth back in the mid 1960s I lived in and had family in southern California, my mother's cousins grew onions and had a packing shed in Realto and I now remember my Uncle Don bringing home a sack of prickly pears I can almost taste them now. Hi dear grandma, thank you for sharing this video. I enjoyed learning how to pick and prepare the prickly pears. I love all your videos. I hope you are having a nice labor day. We went to Michael's today and I got a set of cable needles and some small crochet hooks for knitting emergencies like a dropped stitch or a wonderfully easy bind off. I also got some fabric, thread, and needles to try out some Japanese style handstitching, sashiko. Our foster kitten is graduating on Sunday. And eventually we will get another one. One of our previous graduates did not make it. She kept having kidney failure and needed to be put to sleep. I will always remember her. She was special, mostly white with a brown patch and one green eye and one blue eye. She was beautiful. Well, have a blessed day! My love to grandpa and all! Much love and peace! Ruth 💖 💖 💖 xoxo

I grew up in Arizona and yes we picked a ton of cactus apples! They ferment quickly so we processed them the same day! I wash them and put them in a grape juice steamer and bottle. When I am ready to make jellies i open the sealed jar!
