I love a mug cake when I want something sweet but I’ve noticed eggless is the way to go on microwave mug sweets. A single egg is normally spread across multiple brownies/cookies/cupcakes. But if you’re using an egg for one serving, you end up with something with that sort of spongy consistency.

On the bright side it’s a good way to curb the urge to eat the expanding foam, I know everyone reading this has thought about it at some point.

Everytime a microwave recipe has eggs in it, I instantly know it's gonna be bad 😂 the eggs make everything turn out really rubbery! People who write mug cake (or cookie, i guess) recipes with eggs either don't bother tasting them or really like edible rubber 🤣

That "cookie" reminds me of how all my mug cakes turn out

I usually make my mug cookie with equal parts flour, butter, and sugar (tyoically 2-4tbsp wach). And a pinch if salt. And use that as a base to add flavour. Typically vanilla and chocolate chips. I manage the flour amount on the fly to get a cookie dough texture. Adding milk if I need more liquid

Anyway this is the cookie mug recipe I use:
- 2 tbsp margarine/butter
- 2 tbsp sugar
- 1 tbsp milk (I usually use soy milk)
- 1/4 tsp vanilla extract
- 1/8 tsp salt
- 1/8 tsp baking powder
- 1/4 cup flour
- about 1 tbsp of chocolate chips
Mix together wet ingredients, then add dry ingredients and mix. Microwave for about 1.5 minutes.

I use the same one for a single serving of edible cookie dough (leave out the baking powder and cook the flour separately if you care about salmonella). This is also one of the only recipes I have memorized…

I miss mug recipes on YouTube. Takes me back to staying up way to late watching og YouTubers or makeup and lifestyle videos and getting hungry late at night but not having anything in the kitchen. My favorite was the cinnamon roll in a mug lmao that really was top tier snacking at the time for me 😅

Omg as a teen I was obsessed with making mugcakes. Peanutbutter was my favourite.

I don't remember the recipe, but it was definitely not with egg. Egg recipes are always weird, as to much egg makes it rubbery and splitting an egg is a pain.

Mayo is a good egg substitute. Because it has oil, you also can skip that as well.

Easiest PB Cookies Ever, naturally gluten free:
1 cup PB
1 cup Sugar, plus more for rolling to coat
1 egg

Mix the ingredients except for the extra sugar. Form into 1"-2" balls and place on a cookie tray with an inch or two between them. Press with a fork in a crosshatched pattern to flatten. Bake at 375°F for 9-11 minutes or so. Allow to cool before enjoying.

I did mug cookies in college bc I don’t go for sweets often, but sometimes I need something specific (and don’t want a whole batch of cookies). They were all right, but they were too dry. Needed ice cream or whipped cream

A lot of mug desserts have too little of everything else in them to also have a whole entire egg, the ratios are off. The best mug cake that I make is actually vegan! Here’s the recipe if anybody wants to try:

Ingredients
* 2 tablespoons all purpose flour
* 2 tablespoons cocoa powder
* 2 tablespoons granulated sugar
* 1/8 teaspoon salt
* 1/4 teaspoon baking powder
* 1 tablespoon canola oil or melted coconut oil
* 3 tablespoons non-dairy milk
* 1/2 teaspoon pure vanilla extract
Add 2 tablespoons of chocolate chips if desired

Mix together the dry ingredients first and then add the wet ingredients and mix. Microwave for 1min and 30 seconds adding 15 seconds if the cake isn’t set all the way.
