Pastry chef here: freezing pastries is totally fine, in fact many bakeries bake from frozen and those pastries can still be considered fresh. Especially for an item with puff pastry where you want it cold to achieve those delicious flaky layers when baking. That big gap in the almond croissant was likely just over proofing. Freezing pastries is also a great way to keep them fresher, refrigeration is where you lose moisture.

I have a fun Encino Man story! One night in the 90s, my mom was working late and my dad got us McDonalds. Because he was a cool dad, he let me get a grown up sandwich. As a child, I thought the most grown up burger had to be one with a tomato on it. Also because he was a cool dad, he let us eat dinner in front of the tv. And guess what was on? Encino Man! So there’s this part in the movie where he picks up a toad and bites into it. I bit into my first-ever, grown up, tomato- laden burger at the exact moment I watched him bite into the toad. To. This . Day. I cannot eat tomato on a sandwich. I love tomatoes. I love sandwiches. They remain apart in my world. Thank you, Pauly Shore and Brendan Fraser.

The Portuguese custard tarts are called pastel de natas. If you ever make it to Portugal, they're so much yummier when they're fresh and from an actual Portuguese bakery lol. But wtg Trader Joe's for representing!

I loved Encino man! I think what I loved even more is that after it Brendan Fraser would just show up randomly in every Pauly Shore movie for like.. 2 minutes, acting like Link. It was great.
