To Make Kara Chutney

Oil - 3 Tsp
Onion - 3 Nos
Garlic - 3 Cloves
Tomato - 2 Nos
Byadgi Chilli - 12 Nos
Rock Salt - 1 Tsp
Tamarind
Water

For Tempering

Oil - 1 Tbsp
Chana Dal - 1 Tsp
Urad Dal - 1 Tsp
Mustard Seeds - 1/2 Tsp
Cumin Seeds - 1 Tsp
Curry Leaves
Asafoetida Powder - 1/4 Tsp

Method:

1. Take oil in a pan.
2. Add chopped onions and roast them until they are slightly transparent.
3. Add in roughly cut up garlic cloves and chopped tomatoes.
4. Roast them for a few seconds and add in the byadagi chillies.
5. Add rock salt, mix well. Add in tamarind bits.
6. Roast them for a while and then transfer them to a plate to completely cool them down.
7. Transfer the cooled down ingredients into a mixer jar, add water and grind everything into a fine paste.
8. To a pan, add oil for tempering.
9. Add in chana dal, urad dal, mustard seeds and cumin seeds.
10. Once the mustard seeds start splattering, add in asafoetida powder and curry leaves.
11. Once the leaves are also fried, transfer the ground chutney to the pan.
12. Mix the chutney along with tempering.
13. Red and spicy Kaara chutney is ready to be served along with hot idlies or dosas or any tiffins you like.

Kaara chutney is a red, spicy, fiery chutney which goes wonderfully well with all kinds of Indian tiffins like Idli, Dosa, Utappam, Bonda, Appam, Paniyaram, etc. This chutney is a very basic recipe which involves onions and tomatoes mainly along with a few condiments and regular tempering. Any day, this freshly made chutney is so superior over the regular plain chutneys. Or you can also pair it up with plain coconut chutney by the side to enjoy the best of both worlds wherein there is spiciness on one side and coconut mildness on the other side.
