This can work very well on simpler models, but for more complex models you will end up with thousands of little pieces in your UVs. Good video tho

i've followed this video, but when exporting to Substance painter, it somehow only includes some of the UVs. what have i done wrong?

Good video but a bit misleading. Depending on what you're doing that could be a preferred method. However, if you're doing game art I strongly suggest students or aspiring game artist to understand how to efficiently pack your models in one UV space. You also didn't cover UDIMS which are a godsend when dealing with higher fidelity work. It also makes it easier because you don't need multiple material ID's. This can become a hassle when dealing with something like unreal.
