Inspiration for gentle cozy autumn in English countryside - visiting a beautiful National Trust, a quaint village called Bibury in the Cotswolds and baking caramel apple cinnamon buns.

= Sticky Caramel Apple Cinnamon Bun recipe =

Dough:
360g plain flour (+ 2 tbsp at the end)
45g sugar
7g packet of dry activated yeast / or 2 1/2 tbsp
1/2 tsp salt (omit salt if using salted butter)
120g milk
75g unsalted butter (softened)
1 tsp Vanilla extract
1 egg
60g room temp water

Warm up your milk in the microwave for about 20 seconds - it should be warm to touch but not boiling hot. You should be able to touch it with the finger without burning yourself. If it's too hot let it cool down a little bit. To the warm milk add 1 tsp of sugar and a packet of yeast, mix. Let it sit for about 5 minutes - yeast will bubble up on top.
Combine flour, salt, the rest of your sugar. Make a little well in the middle and pour yeast milk, softened butter and vanilla - mix well. Add 1 egg, mix, then add water and knead your dough well. It will be very sticky in the beginning, so start by mixing with a spoon and then start mixing by hand. It will take about 8-10 minutes of light kneading for the dough to become less sticky.
Cover with a towel and let the dough rest in a warm place for 1-2h or until it doubles in size.

Filling:
60g softened butter
60g brown sugar
2 tbsp cinnamon
A handful of chopped pecans
1-2 small grated apples

In the meantime prepare the filling.
Mix sugar with cinnamon. Chop pecans. Grate 1-2 apples and squeeze out their juice.

Once the dough has risen, spread it into a rectangle about 1-2cm high. Spread a thin layer of softened butter on top. Sprinkle sugar, chopped pecans and grated apple. Roll the dough and cut the buns (about 4 finger wide). I had 8 buns in total.
Cover with a towel and let the buns rest for 30 mins to 1h in a warm place.

Preheat the oven to 180C/ 356F
Bake for 18 minutes.
Pour warm caramel sauce on top and sprinkle with extra pecans.

Best served warm :)

Hello friends,
(that's a mouthful of words lol) recipe is in the description!
How is October where you are? I know for some of you it's still a warmer season, and for some of you it's spring! Are you doing anything to make it feel more autumnal, or are you embracing this month just as it is?

October is my birthday month. It starts out the holidays and birthdays of all of my family, culminating in Christmas and New Year. Small wonder that it is so special to me. Now if the weather would cooperate and quit being so summery.

"Listen! The wind is rising and the air is wild with leaves; we have had our Summer evenings, now for October eve's!"
One of my favourite quotes, Humbert Wolfe.
I love autumn for her cosiness, her jewel like colours, the warming and spiced things to eat and drink, lovely snug cardigans or jumpers, candles, books, cosy vintage movies and of course, extra snuggles with my cats 😊 I was also born in October. Yes, I would love you to incorporate more cooking/baking in your videos.
Thank you for another lovely & atmospheric video Daria xx

I would love more of your autumnal savory recipes. I absolutely adore your channel, your personality, and your truth. I have always had a love for nature, and since we've moved into a beautiful piece of woods, I have become more centered in nature. You have helped me slow down even more and appreciate all the little things that life gives us. Thank you

Hello from South Dakota. The leaves are turning and it is so beautiful. To drive down a dust gravel road and watch the birds, cows and clouds amongst the plains is a favorite past time for me. Have a good day.

Surpassingly lovely autumnal video! And the little English village, with its stone walls and dormers and gates affect my soul with nostalgia for a place I've never experienced in real time.

I just came across your channel. My lucky day! So beautifully filmed. Sure does put a person in the Autumn mood. My favorite travel that I have ever done was to England. was lucky enough to go with my English friend from Bristol. Her family was so nice to their American guest. Was lucky enough to go to several Cotswold villages. I thought I was in a fairy tale book. Also Bristol, London, Darmouth, Totness and Bath were some of my favorites. Looking forward to your next video; and catching up on past ones.

Boy oh Boy....this video was so well done. First time here. The area in which you were walking was absolutely breathtaking! I felt as if I was taken back in time to a Jane Austen novel or movie. So serene!!
