2 if u want a real piadina you need to go in emilia Romagna ( Rimini, riccione, Bologna, Forlì, Ravenna )

Antico Vinaio has been so spread out over social media that it's not worth the lines of tourists you have to wait to get a sandwich that you can get at other paninotecas/schiacciaterias. You can get the same or better sandwich at other places without having to wait 40 minutes. Same goes for Luini, it's ok, but you can get the same quality panzerotto literally next door to the place.

Little disclaimer from an Italian: "Antico Vinaio" is born in Tuscany, Piadina is from Emilia Romagna and Panzerotto is from Apulia, nothing from Lombardy, the region of which Milan is the "capital"

They did not have any sort of street food the last time I went to Milan or Florence or Rome and that was 20 years ago. Italy has really changed. I’m not sure for the better but at least the street food looks like it’s good quality.

Piadina is typical of Emilia Romagna region (north-central and eastern part of Italy). The one you can find over there is frankly uncomparable!
Panzerotto was born in Naples, it can be both fried or oven baked.
