Pad Kra Pao

Ingredients
- 1/4 cup neutral oil
- 1 lbs ground pork(feel free to use any protein of your choice)
- Eggs
- 1 shallot
- 6 cloves garlic
- 5 Thai chili peppers(you can use less if you like it less spicy)
- 1 tbsp light soy sauce
- 1 tbsp dark soy sauce
- 2 tbsp fish sauce
- 1 tbsp oyster sauce
- 1.5 tbsp palm sugar
- Large handful of Thai basil or Holy basil

- Cooked rice

Instructions
1. In a mortar and pestle, pound the Thai chilies, garlic, and shallots until it forms a paste.
2. In a bowl combine, light soy sauce, dark soy sauce, fish sauce, oyster sauce, and palm sugar.
3. In a ripping hot wok, heat oil until it just starts smoking and fry an egg until the whites solidify.
4. Remove the egg and sauté the pounded aromatics until fragrant(1 minute).
5. Add the ground pork and sauté until cooked through.
6. Add the sauce and cook for a couple more minutes.
7. At the very end, toss in the Thai basil.
8. Serve over a bed of rice and top off with the fried egg.

Had some frozen sausage meat in the freezer and a massive bag of Thai rice, so figured I’d give this a go since I’ve never tried to make it before and luckily I had fish sauce, soy and oyster sauce plus plenty of red Thai chilli flakes.

So I just managed to make it following your recipe with a few substitutions (brown sugar, frozen Thai basil and only had normal chillies rather than birdseye seed Thai chillies) and it is still very delicious 😋 🤤

This is how I make it too! It's awesome. But, I usually add some Thai chili and red bell pepper strips just on the basis I like it.

Can I use light brown sugar or coconut sugar instead? This is my favorite dish.
